(#121) Butter Pecan with White Chocolate & Oreos: Buzz Bickerton's Buttered Bonanza

Two things I love: making custom ice cream flavors for my friends and making my own version of classic flavors. This one is for Andy. 
Butter Pecan with a twist (white chocolate and Oreos, to be exact!). 

(#52) WHITE CHOCOLATE RASPBERRY LAVENDER: Luxury In A Scoop

White chocolate, raspberry, and lavender--a match made in ice cream heaven.  And that's exactly what this flavor looks and tastes like: heaven.  This trinity of flavors is so divine, I almost wanted to keep this pint in my freezer just to always have it in there (kind of like a fancy cake--it's so perfect, you don't want to touch it!) 




Scoopsies' White Chocolate Raspberry Lavender
(yields 1 quart)
1 1/2 cups heavy cream
1 1/2 cups whole milk
1/2 cup sugar
2 tsp dried lavender 
3 egg yolks
8 oz. white chocolate
pinch of salt
1/2 cup raspberry puree

(#39) CHOCOLATE PUDDING: Chocolate Trinity

This flavor was actually an accident! We tried making a three layer chocolate ice cream but we decided to just mix the three chocolate bases (milk, dark, and white) and it ended up tasting like the best chocolate pudding you've ever had but frozen into ice cream. AMAZING!





Scoopsies' Chocolate Pudding Ice Cream
yields about 1 quart
1/3 cup plus 2 teaspoons unsweetened cocoa powder
4 ounces bitter-sweet chocolate
2 ounces white chocolate
1 1/2 cups heavy cream
3/4 cup whole milk
1/2 cup evaporated milk
1/8 teaspoon guar powder
3/4 cup sugar
3 large egg yolks
2 large whole eggs
1/8 teaspoon salt
1/2 teaspoon vanilla

*Use high quality chocolate for the best taste. We used Valrhona cocoa powder and Callebaut bitter-sweet and white chocolate.
