I'm not cotton candy's #1 fan but I love the idea of cotton candy ice cream! The color is so fun and the flavor can bring you straight back to childhood and being at your first carnival. I thought this would be an easy flavor but watch out! Egg yolks will turn your ice cream green when mixed with the cotton candy syrup! We opted for a lighter option and only used egg whites to keep the color true.
Scoopsies' Cotton Candy Ice Cream
(yields about 1 quart)
1 1/2 cups heavy cream
3/4 cup whole milk
3/4 cup cotton candy syrup
4 large egg whites
1/4 teaspoon guar powder
1/8 teaspoon kosher salt
1 teaspoon vanilla extract
