(#58) SWEET CORN: Indian Summer



It took a bit of time to get this post up but it was worth the wait. As we transitioned into fall the smell of sweet corn caught our noses and attention. This unusual flavor was recommended to us by a few friends and followers and we're so glad they did! The subtle sweetness of corn pairs perfectly with cream and the texture came out perfect!

Scoopsies' Sweet Corn Ice Cream
(yields about 1 quart)
4 ears yellow corn, kernels removed from cobs
1 1/2 cups heavy cream
1 1/2 cup whole milk
1 cup sugar, divided
6 egg yolks
1/2 teaspoon salt
1/8 teaspoon guar powder
1  teaspoon vanilla extract
