yields about 1 quart
The Ice Cream
1 1/2 cups whole milk
1 1/2 cups heavy cream
1 1/2 cups coffee beans (whole)
2 large eggs
2 large egg yolks
1/2 cups packed light brown sugar
1/4 tsp vanilla
pinch of salt
The shortbread swirl:
1 cup shortbread crumbs
1/2 cup brown sugar
1/4 cup whole milk
