(#13) CARROT CAKE: Bertram Scooper's Finest

In honor of the season premiere of Mad Men tonight, Bertram Cooper--ahem, Bertram Scooper--recommended we make a Carrot Cake Ice Cream.  We'll be serving this at our 60's-inspired ice cream shop: Sterling-Scooper-Draper-Pints!  

Scoopsies' Carrot Cake Ice Cream

yields about 1.5 quarts

2 cups milk

1 1/4 cups heavy whipping cream

3/4 cup brown sugar, firmly packed

1/4 cup cream cheese, softened

2 cups carrot juice

1/2 cup shredded carrots

2 tsp cinnamon
1 tsp vanilla extract
4 large egg yolks
